FRIED KUE TEOW (KUE TEOW
GORENG)
1 kg kue teow
3 big onions
25 dried chillies (cut, remove seeds,
soaked)
2
garlic
2 tbsp dried shrimps
(soaked) ....... (Blend all these in a blender)
300 gm bean
sprouts
2 tbsp light soya sauce
2 tbsp dark soya sauce
3 tbsp dark
sweet soya sauce
a few drops of sesame oil
a pinch of salt- or acc to
taste
250 gm cooked beef (sliced)
250 gm squids (cut into rings)
250 gm prawns (remove shells)
2-3 pcs fish
cake (sliced)
enough oil
celery & spring onions (chopped)
a little
fried shallots, red chillies & omelette (for
garnishing)
Method:
Heat oil in a wok. Put in the
blended ingredients & saute till fragrant. Add in the beef, fish cake,
squids & prawns. Stir fry for a while and then add in the bean sprouts. Keep
stirring. Next, add in flat noodles, stir. Then add in all the 3 soy sauces,
sesame oil & salt. Mix well and add in the chopped celery/spring onions.
Place cooked kue teow in a plate and garnish with fried shallots, red chillies
& sliced omelette.
